Sea Bass Ceviche - Perfect for Summer Entertaining


So easy to make and so delicious!!

You can use any fish - salmon, tuna, scallops, shrimp, calamari, lobster, crab.... I had some sea bass left that needed to be cooked to I thought why not ceviche.

Cut fish into bite size pieces and pour fresh lemon and lime juice over top and mix. Cover with plastic wrap and place in refrigerator for and hour. Add diced red onion, jalapeno, tomato(seeded is best), and cilantro, add more lime juice if needed and a splash of olive oil for flavor and texture. You can also add red or green pepper if you wish. Recover and chill for a few hours. Place 2 halves of avocado on plate and spoon over top. Serve with crispy tortillas.

Beverage choices...Margarita, Pinot Gris, Ice Cold Beer....if you must, ice tea is cool too!

Entertain on a Budget

My friend Chef Joey and I have been inspired by all the good items available at the 99 cent Only Stores around the country. Not only can you prepare a healthy, great tasting meal you can also decorate. I mean really, wow, what one can do with the many treasures available at the 99 cent store. You can decorate for a garden party, pool party, afternoon tea, baby shower, ladies lunch or dinner party. Not to mention all of the major holidays.

The produce is fresh and some is even organic.

A few simple recipes with ingredients all purchased at the 99 cent Only Store. Will post more this week. Let me Inspire You!!!

Sauteed zucchini, squash and onion in olive oil with garlic salt and red wine vinegar....Yum

Chilean sea bass for dinner


This is a healthy, easy, elegant dinner. I cook by feel not by measurement, so go for it and have some fun. You can always order a pizza if it fails miserably, which is unlikely.

chilean sea bass filets
roma tomatoes
lemon
olive oil
salt/pepper
white wine (not chardonnay) I like sauvignon blanc.

preheat oven to 425
Dress sea bass filets with olive oil and salt and pepper on both sides. Place tomato slices in the bottom of baking dish, gently place sea bass filets on top. Squeeze fresh lemon juice over fish and pour wine in, enough to cover the tomatoes. Bake for 15-20 minutes.

serve with sautéed spinach in olive oil and garlic

Don't forget to drink the rest of the wine........

Dessert optional I like a can of whip cream and a man. Use your imagination....
